Here is an easy recipe for a great tasting pizza you can make at home in East Jordan. This New York Style pizza differs from other types of pizza since it has a thin crust.
New York Thin-Crust
To be able to hand toss the dough it must have a very strong gluten structure. You need to take steps to build strong gluten or your dough will tear too easily. First, you need a flour that is high in gluten as well as high in protein. The highest gluten flour you can get at the grocery store is Bread Flour. Here is a good recipe for NY style dough.
- 3-1/2 cups flour
- 8oz warm water 90F
- 1 Tablespoon sugar
- 1 teaspoon instant yeast
- 1 teaspoon salt
You will need a mixer to be able to build enough gluten.
Add ingredients to mixing bowl in this order;
The total mix time is 12 minutes. Mix at low speed until the dough forms a ball. At this point, you want to increase to medium speed and continue to mix for the remainder of the 12 minutes.
Once your dough is done, divide it into two and then lightly coat with olive oil. Put the dough in an airtight container and allow the dough to rest at room temperature for 30 minutes. Then place the dough in the refrigerator overnight, but it can remain in the refrigerator for up to 4 days.
The next day, take the dough out approximately 3 hours before baking. During this time it will continue to rise until it doubles in size. At this point, your dough should be strong enough to be tossed.
